Throughout the recipes I’ve added some links to tools I use. My scale is maybe the most used non-cooking piece of equipment I have. Sheet pans I use a lot. And knives. Well, you get the idea. I have made a page for you to find some ideas about what I use and that means they function well. I have little patience or tolerance for poor performing equipment.

This little proofer is just so excellent. It can keep a good humidity or none, a low temp for croissants and Danish or a bit higher for sandwich breads. Big enough to hold a 1/4 sheet pan or a mixing bowl of dough.

I have about a dozen of these things in the kitchen. Great for bowl, pans, counters.

My Preferred Scale

Half sheet pan with drain rack (perfect for draining doughnuts).

I feel like I never have enough bowls.

Flour sifter (yeah, it’s a strainer)

A stand mixer is a great tool to have.

Offset spatulas are very useful for decorating cakes, but I find I use the small ones for peanut butter, Nutella, butter, pretty much anything that can be spread is spread with these. I have 4 and want more! I use the other for cakes, of course, but also flipping items in hot pans, removing items from an oven. The uses are almost endless.

I love this knife. I own a 10″ knife, which is a big blade. Even cooks were sometimes cautious with so long a knife, but an 8″ blade is just right. I’ve had mine for nearly 20 years and it’s still great.

Here are two sites, both affiliates, who sell restaurant equipment. Not everyone is in need of a 40 quart mixer, but more than a few people would like a 1/4 sheet pan or other small wares. These places are great for that.

Here is a video I made of unboxing day.  I ordered some pecans for my momm’s Pecan Rum Ball cookies and vanilla.  I want to tell you that the vanilla is so much better than everything I’ve used.  I can taste it in the cookies when I used half the request amount.  It is that good.
