The Bread Baker’s Apprentice

Peter Reinhart was a Jesuit priest and a baker before he became a published author.  He had a career at Johnson and Wales and was a distinguished baking teacher.  Reinhart has the soul of a teacher: patient and thorough and encouraging.  I have made much use of this book as his style reaches me.  His passion for bread is clearly evident which makes your baking so much easier.  The greatest thing a teacher can do is build a successful student.  Success is made possible with this book.
