The Escoffier Series continues with the Gratins

Gratins aren’t a huge culinary application, but they are tasty when used. So, they’re worth discussing.

There isn’t too much special needed, just the food, some cheese and/or bread crumbs and a hot oven.

More than the obvious can be gratined and nearly everything is made better with a toasty crunch.
